Today, I was craving grilled cheese and not just an ordinary grilled cheese, but my favorite grilled cheese, Italian Grilled Cheese sandwich. It’s made with all fresh ingredients, from the bread to sauce. Anytime ooey gooey cheese is involved my mouth starts watering. Just look at that picture with the cheese dripping down. Yummy!
Now that I’ve gotten you hungry, let’s get to the ingredients: Fresh Basil Pesto, fresh mozzarella, tomatoes, arugula, and fresh ciabatta bread.
Time to get out your cast iron skillet. Yep, that’s right, your cast iron skillet. It makes the BEST grilled cheese sandwiches EVER! Heat the skillet to medium-high heat. You can’t have the perfect grilled cheese without a little butter, right?! Well, since you agreed, spread a little butter on the outer layers of the bread. Spread the homemade Basil Pesto (or store bought if in a time crunch) on the inside side of each of the layers of bread. Top with slices of mozzarella, thin slices of tomatoes, and a good heap of arugula. Place the sandwich with one of the butter sides in the skillet. I like to press the grilled cheese with my cast iron bacon press, but you could use the bottom of another skillet too. Cook for 2 minutes or until golden brown. Carefully flip and heat on the other side for 2 minutes or until golden brown.
